– When and how did J.D. William’s Whisky Bar come into existence?
“I’ve always had aspirations of opening a bar and am a whisky lover. I think it was around 5 years ago that I decided that opening a whisky bar in Amsterdam that serves Asian fusion food was a good idea!”
– Why did you choose whisky?
“I’ve been drinking whisky for over 20 years and have picked up some whisky knowledge from my time living in Japan and the U.S. It’s always been my spirit of choice and I just love how whisky is so complex in taste and character. There’s just so many different types of whisky and there is much love put into distilling and maturing it.”
– What is your background?
“I’ve done many different things since I finished university. I lived and worked in Japan as an English teacher before working as a sports and music journalist in Tokyo. I then moved to Seattle and worked in market research at a TV station. I then moved to San Francisco for 12 years where I worked in advertising doing media sales for TV and radio stations. I also worked 20+ years as a House music DJ and started a record label called Bounce House Recordings nearly 15 years ago, which is still active. I’ve produced and released a lot of music and have also done many sound design projects while living in Amsterdam for some high-profile clients. Now I own a whisky bar!”
– What kinds of whisky and food do you offer in J.D. William’s Whisky Bar? What are your most popular products?
“We offer over 200+ whiskies from around the world. We also have the largest whisky cocktail menu in Amsterdam (20+ cocktails) and a great craft beer selection. We also partner with the Scotch Malt Whisky Society and are one of three bars in the entire Netherlands that serves their exclusive single cask whisky. Our food focus is on Asian Fusion food as both myself and my wife are of Asian heritage. We have lived in areas where Asian food is a staple part of life (Japan, Hong Kong, San Francisco and Los Angeles) and wanted to bring some of our favorite dishes to Amsterdam. We introduced Poke when we first opened 2 1/2 years ago and now I see other Poke restaurants opening up (which I think is great). We also serve Korean Style Tacos and some fabulous sweet potato fries. It’s quite a unique kitchen and we are always adding new seasonal dishes.”
– Who are your customers?
“We get a lot of support from the locals (ExPats and Dutch customers). They make up at least 65% of our customer base. The rest would be tourists. Of course in the summer (June-August) that number increases as there are so many tourists now in Amsterdam. We believe in growing our local customer base and attracting the right tourists for our bar that “get” our concept.”
– What are your future plans?
“An immediate goal of ours is to expand our bar with another speakeasy style cocktail bar on site. This should be ready in September. A longer term goal is to open a distillery in my native New York state where I grew up and start making my one whisky!”
